Recipe: Cubano Dog

Cubano Dog

Homemade pickles are so simple to prepare! Combined with the Smart Dogs and “ham,” you’ll never know you aren’t eating the real thing.


1 cup very thinly sliced English cucumber, cut into half moons
1/2 teaspoon dried dill
1/4 cup white vinegar
1 teaspoon sugar
1/2 teaspoon mustard seed
1/4 -1/2 teaspoon salt
1/2 clove of garlic, cracked
2 large Portuguese rolls or 4 hot dog buns
4 Lightlife® Smart Dogs
4 slices Lightlife® Smart Deli Ham slices
2 ounces Vegan Swiss cheese, sliced into 16 strips (1/2 inch each)
Yellow mustard, to taste


Turn the oven on broil.

In a heat-proof bowl, toss together cucumbers and dill. Set aside.

Heat vinegar, sugar, mustard seed, salt and garlic in a small saucepan over medium-high heat for 3 to 5 minutes until the liquid begins to simmer and the sugar dissolves. Pour liquid over the cucumbers and toss to coat evenly. Cover and place in the refrigerator. (Pickles can be prepared up to 2 days in advance.)

Slice the Portuguese rolls in half.

In a medium saucepan, cover 4 Lightlife® Smart Dogs with water. Bring to a boil; turn off the heat. Let the dogs sit in the water for 2 minutes.

Roll 1 slice of Lightlife® Ham around each dog. Place each on half of a roll and place on a baking sheet. Broil dogs for 2 minutes.

Remove from broiler and add 4 slices of cheese to each dog. Broil for an additional 1 to 2 minutes or until the cheese is melted and the bread is toasted. Remove from the oven.

Add mustard to taste and about 1/4 cup pickles on each dog.
